Taking proper care of your wood cutting board is essential for keeping it looking great and lasting for many years. Cutting boards naturally dry out over time, and frequent washing can cause them to dry even faster. With the right care routine, you can prevent cracking, warping, and premature wear.

Washing Your Cutting Board

  1. Always wash your cutting board after each use, but never put it in the dishwasher. Dishwashers expose wood to excessive heat and water, which can cause serious damage.
  2. Hand wash only using warm water and mild dish soap.
  3. Rinse thoroughly.
  4. Do not soak the board in water.
  5. After washing, proper drying is extremely important.
  6. Proper Drying to Prevent Warping.
  7. Never leave your cutting board flat on the counter while it dries. When one side stays wet against the countertop, moisture becomes trapped and soaks into the wood unevenly. This can cause warping or cupping over time.
  8.  Let the board air dry upright. Use a drying rack whenever possible. This allows both sides of the board to dry evenly and helps maintain its shape.

Oiling Your Cutting Board

To keep your wood cutting board healthy, you should apply food-safe mineral oil on a monthly basis. Regular oiling prevents the wood from drying out and helps stop cracks from forming.

If a board dries out too much, cracks can develop, weakening the structure. Over time, this can cause the board to fail completely and become unusable. Proper oiling helps strengthen the board and extend its lifespan.

Why Oiling Matters

Oiling your cutting board provides several important benefits:

  • Prevents cracking and splitting
  • Helps make the board water-resistant
  • Tightens wood pores and grain structure
  • Makes it harder for bacteria to penetrate the wood
  • Improves overall durability and appearance

When properly oiled, water should bead up on the surface rather than soaking into the wood. If water begins to absorb quickly, that’s a sign the board needs more oil.

My Cutting Board Oil and Wax Process

The process I use for cutting board maintenance includes:

  1. Apply three layers of food-safe mineral oil
  2. Allow each layer to soak in for a few hours
  3. Finish with a layer of beeswax cutting board conditioner

Letting the oil fully penetrate between layers ensures deep protection and long-lasting results. The beeswax adds an extra layer of moisture resistance and gives the board a smooth, finished feel. I like to use Howard cutting board oil and Howard butcher block conditioning oil on my boards.

Final Tips for Long Lasting Cutting Boards

  • Oil monthly (or more often in dry climates)
  • Never soak or dishwasher your board
  • Dry upright after every wash
  • Re-oil whenever the wood looks dull or dry

With proper care, a high-quality wood cutting board can last for decades and only get better with age.
